I agree. With skilled driving, I think the Z will take a 98 - 04 Stang stock.
As for the 2005s, it think the edge will go to the Stang, but again, it can all depend on how skilled the driver is.
Since I own both, one day, I'll have to get a buddy of mine to drive my GT, head over to the 1/4 track, and pit them against each other. Then we'll see how they both square up.

I am pure stock down to the air filter except for some tranny work on my '04
auto tranny enthusiast 350Z. I run 13.9 qtr. miles consistently and last year
that was on pretty worn out stock rear tires. I have no problemos beating '04 and prior
stock Mustang GTs in a qtr. mile. It is not very close either. I have never
raced an '05 or '06 Mustang GT. I agree with others that have posted that
350Zs are primarily a sports car whose forte is handling in curves and dips
and such, but our cars do have good thrust and good torque. Expecially for a
non forced induction V-6.
And I think all of you are correct in saying that our independent rear
suspension will never be the optimum set up for drag racing but it is great for
performance handling and everyday driving. Having said all that, I am
hopefully finally about to get my twin turbos installed and I think some of you
are going to be surprised at what a forced induction 350Z will do in a qtr.
mile. I never want my 350Z to be a pure dragster. I want it to be a great
handling sports car that will also run a quick qtr. mile. According to that
criteria and for the price, I think it is a great all around performance car for the
money. I have had mine for 2 years as of last month and have never
regretted getting it even once.

I think there are four types of automotive people in this world. Those that prefer straight line, those that prefer curves, a mix of the two, and those that use their car just for daily driving.
I'm a little of the first two myself. Most people are one or the other, prefering either straight or curves. I purchased my GTP Comp G for the upgraded suspension and 3.29 FDR, as well as the straight line performance given to it by the blower strapped on it. While it's not as quick in straight line as others, it does handle pretty damn well, while still allowing me to drive comfortably everywhere (I *HATE* flying). The best part is that 30 hp is only 60 bucks (pulley swaps). So what it comes down to IMO, is that we should not be making fun of one type of racer if we are another. I've heard "Drag racing takes no skill, it's just stomp and go!" that's not the case. Hell, even in my car, stomp and go is a cloud of tire smoke. Imagine cars like the GTO, F-bodies, Mustangs, and Corvettes doing that. They'll sit there spinning while I cross the finish line! I think we need to be tolerant and understanding of other racers based on what they like, and what we like, and recognize that all forms of racing take skill :)
