For your 71z?
What kind of cage do you want? Does it need to be NHRA/FIA certified? Do you actually want a full cage or just a roll bar?
Roll bars can be had for cheap from a handful of manufacturers directly from:

If you want a full cage, you can get an uncertified cage custom built for under $500. A fully certified cage is going to be a lot more expensive and the one's I've seen required removing the top of the car first, installing the cage and then re-attaching the roof!

WW,
Let's say you have the knowledge and equipment to make your own cage. What is required for roll cages to meet NHRA/SCCA/ETC. standards? Can certified cages be built yourself for less than $500 and without removing the roof?

As to your post on certification: it all depends, what hte cage is made from, what sanctioning body you are running with, what type of racing you are doing, etc, etc. Best bet is to get a rule book for what you want to do and go by that.
