I got the brushed aluminum ones because I thought they better matched the interior. I like them.

I made my own by thinning out the plastic buttons and glued on the aluminum caps that i cut from a lathe.

I just use the ones that came with the car. Never a problem, and they've never come off...
And they're light weight too...

I have never taken off the carpet buttons or the door buttons, but I am curious, could either of them be replaced with regular ole' stainless or aluminum machine screws and washers?

The carpet buttons are not a standard screw - take off the plastic one and you'll see.
The Sector111 (Hangar111) door panel button replacements needed a standard phillips-head screwdriver, NOT an allen wrench, to put in, and aside from the cap that hides the screw top, it seemed pretty standard. I'd imagine you could put standard screws in the door panels. Ooh! That's a neat idea - get some gold-colored ones, if you think it'll match your paint color...
