I like the carbon fiber on black and maybe some other dark colors but in your case I'd go with the laser blue paint. I'm in the middle of painting mine Chrome Orange. I didn't wait long enough for the base and pearl coat to dry and my clear coat has wrikled a bit. I'm hopping wet sanding is going to fix it up but I suspect I'm going to be starting over .

I'm not a big fan of a centre console matching the exterior. It should match the interior. If you have black seats, a black CF centre console would look sweet. It would also match the door inserts, carpet and dash. If you did the HVAC surround in black CF then even sweeter. This is the route I'm probably going.

I think the paint just ties everything together nicely and really completes it. Don't get me wrong, CF is awesome, but I would want more than just that one piece so it tied together- sills or door panels or something else.

The aftermarket CF stuff looks out of place IMO. CF is a lightweight STRUCTURAL material so, to a purist like myself, it looks very applique as door panelling and interior trim. That's why I voted for body color paint, but only if it's a subtle color. The aluminum in the interior is the material theme and I think capitalizing on that is much more appropriate than jumping to CF. It would be cool to get your stock tunnel "metalized" with the new spray-metal process being used in the architectural market. It's what they used to paint that seemingly chrome plated prototype Ford supercar a couple years back that we all saw in the car-zines. It's a very cool process of basically matrixing metal particles with clear polymer binders to "plate" the surface. Then you finish it like any metal - brushed, polished, beadblast, etc. The only problem is I'm not sure the clear anodized look is obtainable.
Next choice would be leather or alcantara upholstered.

I'd love to get the black plastic dash upholstered in non-reflective black alcantara. I'm just afraid to remove that much of the dash to do it myself. Is this a DIY job or do you recommend that it be pro done? Who did yours? It looks great and brings the quality of the interior up a couple noches. If it is a DIY job some tips would be much appreciated.

I think you are talking about Val's car. European cars come that way from the factory, if I'm not mistaken.
Since you are local, you should talk to South Bay Lotus. They did Ronin's dash in black Alcantara-like material, as well as the side sills. Looked pretty good to me. You can sorta see it in this pic (the black car):

Back to topic, I thought I might see a slight advantage on one option for this poll, but as of this thread, apparently it's dead even with CF only get 2 more votes than painted.

As far as I know it's just the knob that comes with the "premium" pack. The bottom hemisphere is aluminum, the top is leather, and at the north pole there's a large exposed allen-head bolt. Here's the best picture I have at the moment (a crop of the same image at camera resolution):
Does it suppose to have lotus logo on top of the shift knob?
When I got the car there was a tag hung around the shifter and a little lotus logo sticker on the tag that I assume was supposed to be on top of the shifter. It fit right over that bolt when I tried it, but the adhesive wasn't strong enough to keep it there. I decided I liked the look of the exposed bolt better since it fit more with the rest of the car, so I left it as-is.

Dude, that white leather interior is way better looking than any CF. I wish I had that in my car.

The blue leather looks great. As I said before the centre console should match the rest of the interior (IMO). In response to someone else's comment, cf is used all the time in non-structural applications like hoods, diffusers, etc. If it results in a lighter piece than I think it makes sense. I'm not sure how much light a cf centre console is but damn it sure looks good.
