what exactly is this knife edging thing anyway? how is it done, and how does it affect engine performance?

One thing is it would then be lighter & the edge wouldn't have so much drag when spinning & cutting through the oil.

whoa.. ok.. now I have more questions.
why is all that material on that side anyway? (the opposite side of the crank from where the piston bolts on)
why not just cut it all off? is it a balance issue?
and finally, where do people get this done? I have a huge lathe at work, but Im afraid I wouldnt be able to balance it properly after machining it down..

It's for balance... and heavier cranks tend to give smoother running in a production car. People who want more power generally don't care if it ticks over a bit rougher, but joe public would.
